@studiouno It’s “One Bite Won’t Kill You” by Ann Hodgman. One of my favorites. It’s a very funny cookbook about feeding picky eaters.

@margonaut They are so good — especially if you make them with limes, which is what the recipe calls for. We’ve been watching old episodes of the British Bake-Off and I think I’m going to combine this recipe with one I saw on the Bake-Off that used grapefruit and ginger.

@wiesnerbeth I want to move the camera down just a smidge so I can see the filling ingredients! Is that 1/2 C lime juice? How many eggs? And how much baking powder?

@margonaut 1/2 c lime juice; 2 large eggs; 1 tbls. grated lime rind; 1/2 tsp. baking powder; 1/4 tsp. citrus salt (optional). Oven: 375; 8-inch pan, greased. Mix the crust ingredients then bake for 15-20 mins. Turn oven down to 350. Mix the filling ingredients until very smooth. Pour over the crust and bake another 20 minutes. Chill very well. Can be frozen.
