Home-made Nachoes

This is what I had for dinner last night: home made, delicious nachoes! I make my own salsa from tomatoes, capsicum, garlic, paprika, pepper, sugar and tarragon. Then, I chop up mushrooms and Kalamata olives into quarters and put them on plain corn chips, put on the salsa, grate on a little cheese and pop it all into a medium oven for 20 minutes. Ten minutes before it's due to come out, I open a Haas Avocado (or whichever one you have got chilling in the fridge) and mash it up with salt and pepper in a bowl and get out the sour cream. Then, serve up... yummo! Garnish with parsley on top! :D
