"Collard Sandwich"...

Maybe it is a local delicacy. I like collards, but not sure they would make a good sandwich. Most folks were getting them in a bowl, with pepper sauce. The lady selling them seems to be enjoying herself!

@julzmaioro Ha! Collards are leafy greens eaten cooked (not usually raw). They are often cooked with some type of meat/bone (usually pork) to give them added flavor. They are very tasted, but sometimes an "acquired taste"!

For some reason I was thinking a shell fish.. perhaps it's a bit like what the Maori's cook up of Pork and Puha.. i think that is an acquired taste as well..

I had never heard of collards until I moved to the south - still never tasted them 50 years later! And a sandwich - don't think so :)
