Molasses Making Time

The horse goes around in a circle attached to a gadget which powers the machine that strips the outer layer form the stalks of sugar cane or sorghum and squeezes the juice. The juice is then boiled in kettles until it thickens and becomes molasses. I grew up watching my grandfather do this every fall. I'm sure there are more modern ways of doing this but in the south it is still done this way.

great collage! Thanks for the explanation, I never knew how they did this. In our area they make maple syrup so the boiling process is probably similar.
