Farm-fresh foods in town inspire our cooking, and we do a lot of it up here! Yesterday we purchased a dozen fresh eggs from Sunnybrook Pond Market (the store interior being about the size of our Livingroom!) I used them to make some mini quiche that included chives cut from our back yard. The baby greens on the side were the first picked from lettuce I'm growing from lettuce that went to seed in California before coming up here. ...and more chives. We took some to our neighbour, Jan, as a thank your for the home-made enchiladas she brought to us for dinner last night! It's both ambiance and a lifestyle amongst friends up here. It's worth noting as it will be so missed...

If you'd like to make this very easy mini-quiche for any meal or appetizer, I found the little pre-made pastry tins at Wal-Mart. Recipe called for 5 eggs, 1/4 C Milk (I used 2T Milk, 2 T Whole cream), salt & pepper, & 1/4 C grated cheese (we used Parmesan this time). You can add other diced items, so I used diced tomato, diced chives, and crumbled bacon. Cook the little crusts 375/11 min and add ingredients, cook 375/12 min. That recipe will make 7 egg bites in the special pans for the Instant Pot if you have one (delicious!)...but we love them in these little crusts and that recipe made 24 of them! Now @ankers70 , you can make these at home, and @joansmor you can have hot quiche for breakfast, cold quiche for lunch, and still have a tray-full to take to a party! @louannwarren Not "too beautiful" at all! Too tasty for words! And for those who mentioned "community", I've never known anything like it here! Get something started where you live!
