Here's a Saturday lunch that is quick, cheap and filling. Three minutes to boil the noodles, then pour a bit of the broth into a beaten egg so it sets, then pour the egg into the pot of noodles and stir like mad. The result is an egg drop soup that will keep you satisfied all afternoon. Now if they would just reduce the sodium in the seasoning packet, I could even say good for you!
One of my favorite light lunches! I love these silly little Ramen noodles plus the egg. I usually just throw half of the flavor pack away. That way I can cut the salt in half and there's still enough flavor to my taste. Good for a quick meal. I agree.
@karenann You are right of course. I do wonder why they couldn't make a low sodium version. It would probably cost more than the 18 cents a regular pack costs.
Yep, that's what would keep me away from Ramen (my son's famous cheap diet in his younger days).....the sodium. But it does come in handy in a pinch, that's for sure. Love your recipe ;-)
I hardly ever make ramen any more, but when I do, I don't use the whole packet, I find it too strong. Have you ever tried just not using the whole thing?
