An economical recipe: leftovers from last week’s sheet pan dinner, a can of spiced up tomatoes, black-eyed peas (of course) served over rice. No corn bread because we didn’t need more carbs. In its place to represent gold — fresh pineapple. No collard greens because we don’t like cooked greens. A handful of shredded cheddar. And we are ready to take on the New Year.
