My daughter is coeliac, some of the gluten free recipes are surprisingly good I find I have most success with the Doves Farm flours. The sponge looks pretty good to me.👌
@thewatersphotos yes, it's a bit wetter than an ordinary sponge, that maybe due to it being gluten free and the changes you have to make to recipes - but I'm no scientist. Mum was a diagnosed coeliac, so no wheat products for her, and I'm just using up things I bought but never made. And Victoria because Queen Victoria enjoyed afternoon tea with this new light sponge cake which couldn't be made until baking powder was invented!
