Come any closer and I'll disappear

Another day.. another filler. I don't know if I find a photo opp. on my way to Newmarket where I've to run some errands. Hans is away on business again for another week and this afternoon I have to get some of the kale in from the garden and start cooking and freezing. the kale is just taking over. it must be a very good year for it while the rest of the veggies are doing not as great.

I didn't know you could freeze kale. How do you prepare it from its frozen state?

@allie912 Allison, there are two ways. In Germany they say kale tastes better after the first frost. one year I left some in the garden and brought it in with snow on top and all. it was awful to strip it off the stalks. my hands were getting too cold.
you can buy some kale if you don't grow your own and freeze it in plastic bags and freeze it for later use. now I don't really find a difference in flavor if they are fresh out of the garden or from the freezer. I found no preference, both meals tasted the same.
now here is my recipe.
I take a big roasting pot, add some homemade lard or you can use a bit of oil. I sauté some diced onions and slowly add the stripped off kale. it requires a lot of turning over all the time, then I add some more kale and continue the same way. I does simmer down fast. I keep on adding more kale until the roasting pot is over half full. now I add white and red kidney beans, one can diced tomatoes and a glass jar or can of spaghetti sauce. stir it all up and add and let it simmer. add salt, pepper and garlic to your liking. now is the time to add some smoked cocktail sausages (cut into 3 small pieces) stir it around again and let simmer for awhile until the kale is nice and soft. makes a delicious complete meal. we have one meal of it and the rest I freeze in yogourt containers. comes in handy when you don't feel like cooking, just unthaw and heat up.
someone told me you can make kale chips by baking them in the oven. I tried, but they were not to my liking.. btw I also prepare the same type of a meal by using broccoli leaves or red Swiss chart instead of kale.
