I came across an out of date jar of sun-dried tomato pesto recently and didn't know what to do with it so I looked for a recipe on the internet. I found one for pasta with roasted vegetables and tomato pesto. Perfect - and even delicious! I tweaked it a bit and put in what veg I had and would definitley make it again.
