Day 13 of 100 Happy Days - I missed National Taco Day on Sunday, so I made sweet potato street tacos tonight. I usually have a hard-boiled egg, and strawberries to complete the meal, but I forgot to prep the eggs, and I ate the strawberries while I was cooking. So... I improvised and made a sunny-side up egg instead. I have eaten eggs in every form, but a bright yellow runny or gooey yolk makes me happiest! It's not a pretty egg, but definitely yummy...
