First time, good but very expensive 80€/kg... don’t think I’ll buy it again

If you like abalones, you should come to live here in Brittany. Abalones are plentyful on our piece of coast, but we are only allowed to catch them for our own consumption, not for selling, and no more than 20 per day. It is quite a physical exercize to catch them, because they stick under the rocks. The ones you show have a ring, so they have been caught by a licensed professional diver who has caught them one by one individually and has the right to sell them. Very few licenses are delivered in order to protect the species, this is why the prices are so expensive. Abalones are delicious but there are a few tricks in order to prepare them correctly.
