Broke out the tripod today to get a real food shot. I'm tempted to crop this photo into a square with the left side of photo remaining--the dof is nice to have, but just wondering. Any feedback is welcome! And if I could give anyone samples, I really would!
I bought a product called "Everything but the Bagel" seasoning two days ago, and I thought it would work quite well with my leftover brown basmati rice in making homemade crackers. Ever since I had "Mary's Gone" crackers from the grocery store, I've been obsessed with making my own. After all, whenever I cook rice or quinoa, I'm always left with some of it and I don't know what to do with it. I haven't perfected a recipe to share, but the ingredients in this one are about 1.5 cups of rice, 2 T+ water, dash of soy sauce, and 1 T Everything but the Bagel seed/spice mix. I put it in the food processor and keep adding water bit by bit until I can see that if I put it together, it would form a dough form (albeit grainy). It would mix much better if I had some quinoa I think as it's more gooey, but I only had rice.
I measured out about 1 tsp worth of the dough to make tiny balls out of them. Then, I pressed them onto silicone baking sheets (I don't use parchment, but that would work too) till they are laser thin, perhaps too thin, but I want the whole thing to be crispy!
I used 350 "fan" convection bake, and I made a careful watch of them, starting at 5 min. a side (but I think I'll up that to 10 min a side), then I carefully flipped them (this is why silicone sheets work easily) with a very thin spatula to do another 5-10 min. on other side. Overall, I think it took at least 20-25 min. If they are thicker, they definitely take more time.
I made about 20 today, and I have 2/3 of the batter left for another day--perhaps tomorrow if I have the time.
As far as a weight watcher item. The entire dough mixture is just 2 points. I'll easily make about 60 crackers from it. That's a win for me. And it tastes GREAT!
i have made a few versions of seedy crackers but often have leftover rice so this could be good to try. when i do photography with plates of food i find it interesting how changing the pov even slightly makes such a difference and i usually take many many photos and review them later to find the best one, here i think its the tilt that is a bit off, i would prefer the plate to be level
I would love the sample! The photo is good but I agree with @kali66 about the tilt. In terms of square or rectangle from this POV I think rectangle is better.
The crackers look yummy. Definitely sounds like a win. I love the way the parsley turned out in the photo. I think you could crop it for a different type of outcome.
