I have so many eggs at the moment… normally at this time of the year, the girls seem to go on strike. This year, I'm still getting about 10 eggs a day, even though it is the middle of winter. Lots of friends are appreciating them though. I needed to make a 'plate' to take to a 'pot luck' dinner tomorrow night, so thought a frittata would use up some of those eggs.
This looks so good Dianne, even though I have just eaten I could start all over again! We have used our last four eggs tonight! One of the unfortunate things we did when our house was under offer for six weeks was get rid of our hens & hen cabin. The new people didn’t want them so Harry took them to his sister....I miss our hens! We will get some more sometime!
