Okay, so I'm a total Noob at photography...recently I've seen quite a few people posting and talking about HDR images.
Can anyone tell me what exactly they are and how to do them?

http://petemc.net/hdr-guide/ is an excellent tutorial. The main points are: shoot multiple shots of the same scene with a tripod in RAW mode, then use a special program to stitch them together and play with the levels.
As OG said, several photos laid on top of each other. Try using layer masks for interesting effects too.
Another trick I saw one photographer use was to perform a HDR composed of several dozen photos, setting the camera up manually each time. The camera was always set up in a slightly different way each time (human error) so the photos didn't exactly match and the result was somewhat like an oil painting. Might be one to try if you're into experimental photography!
Naomi - you can follow any of these links or discussions to see what it is - but one thing it is not is easy. At least easy to do well. Alot of HDR looks like CGI by the time people are done with it. But proper HDR will really bring out extra life in what could otherwise be a more lifeless scene - and I've even seen people do it with portraiture...now thats cool.
