A soup may sound an unusual recipe for summer, but this must be eaten almost cool, and cooks all by herself: no painful sweating in front of the stove!
Looks YUM. My son is in Pescara, Italy currently for work. Has sent some photos of food from restaurants. Makes me want to drop everything and head to Italy.
Oh my goodness, is that what Minestra soup is supposed to look like? If you only could see my Minestrone soup that was dished up today at work. I think I'm going to chuck it out right now.
@mona65 Thanks, Mona, I was breaking all of them because I didn't want to have a book with all the same pictures... yet, we had some discussions with the publisher's graphics and they won... @helenhall yes, you cut the vegetables in bigger pieces than an ordinary minestrone, and arrange them in layers in the pot, then cover with water or vegetable soup, and let cook for 25-35 minutes; the water is absorbed or evaporates and the vegetables retain all their original flavor... @joemuli Thanks, Joey! @gardenfolk Completely vegan! @amyk good idea.
