2016.05.05 Thursday: It is my understanding that Cinco de Mayo is not that big of a holiday in Mexico, but in the United States it has come to be a wide-spread day of festivities to enjoy Mexican cuisine, culture and music. Of course, all of the Mexican restaurants in our area have parties and go all out trying to bring in more customers!
My family has eaten Mexican food on May 5th for decades now …simply because we like Tex-Mex cuisine; and also because (decades ago!) when one of my sons was in Fourth Grade, his class celebrated May 5 with an “International Cuisine Day” and we all enjoyed the idea.
For Cinco de Mayo this year I prepared a clone recipe of Taco Bell’s Crunchwrap Supreme …It was very good and we all enjoyed this meal together.
