It's Luke's birthday tomorrow, and we've had a marathon baking session - Choc Chip Cookies for all his classmates. Over the years these cookies have proved far more popular with the boys than birthday cake.
Recipe:
Cream together:
250g soft butter
200g brown sugar
200g white sugar
Add and mix in:
2 XLarge eggs
5ml vanilla essence
Mix together and add to egg/sugar mixture:
280g cake flour
5ml baking powder
2.5ml salt
5ml bicarb
625ml oats, blended in the food processor
Add to mixture: (it will be quite stiff and heavy to mix. That's good!)
250g choc chip morsels
150g pecan nuts, chopped
100g dark chocolate, chopped
Roll into balls and space 5cm apart on baking tray.
Bake at 180C for 15 minutes till brown.
Make sure they are cold before you bite into them - the choc chip bits can burn if still hot.
