I made a stock of spice rub today for braais (barbecues). Here's the recipe. (If you are going to store the rub, then use dried ingredients - flakes and herbs. Fresh is great for immediate consumption.)
25ml salt
25ml sugar
2t mustard (I used whole seeds)
2t garlic flakes (fresh optional)
2t onion flakes (fresh optional)
1t coriander (fresh optional)
1t chilli (fresh optional)
1tsp black pepper (I used crushed corns)
1/2t cumin (I used whole seeds)
1/2t rosemary (fresh optional)
1/2t thyme (fresh optional)
Mix together, and rub onto meats before grilling, barbecue or braai.
