Another lovely sunny day today. Most of today was spent preparing for the arrival of our friends in the evening who were coming over for dinner.
We always have to prepare a menu that is easy to prep in a galley style kitchen when some us seem unable to ‘pull in’ when passing each other!
Tonights menu was:
Starters - grilled ciabatta with pesto, sun-dried tomatoes and crisped pancetta and ciabatta with Spanish tomato and garlic salsa and anchovies.
Mains - salmon with prawns, dill, and lemon on a bed of watercress with new potatoes and green beans (there should have also have been grilled long red peppers but I totally forgot them and left them uncooked under the grill!). Colin made his delicious lemon and wine sauce and we served in individual jugs.
Dessert - Fresh mango and lime pavlova with a scattering of pomegranate seeds and cream (todays photo)
We also had cheese for a chessboard, amaretti biscuits and coffee but everyone was so stuffed they couldn’t manage it.
We had a lovely evening and Mr Huffkins put in an amazing performance of appearing and taking banana chips. We didn’t get to bed until well after 1.00am!
