Will my squirrelly boys eat this?

In my fruits and vegetables delivery I got this morning, I got acorn squash, butternut squash, yellow squash, zucchini, eggplant, sweet potatoes, apples, oranges, peaches and bananas. Now to figure out what to do with them.
Oh yum!! I will!! Love it buttered, brown sugared and cranberried:).

I like this focus. You got a lot of nice fruits and vegetables. I love acorn squash back with a little brown sugar, butter and cinnamon. Umm. I can taste it now.

I cut the acorn squash in half (level off the bottom and top first), then scoop out the seeds. I put some butter, nuts (usually almonds or walnuts and only a T), raisins or cranberries and a dab of brown sugar. Bake at 350 deg. for 1 hour, putting a small piece of alum. foil over the top if it looks like the raisins or cranberries are browning. You can use regular or golden raisins- they both work. You can do the same with butternut squash, but it has to cook longer if it's a big one. You can also cook acorn and butternut squash like potatoes and mash them. As for zucchini, I learned a really simple dish from a lady in W. Va. that Jeff still loves and asks for when someone gives us a zucchini. First you slice up the zucchini really thin and place in a large skillet with some olive- but only a little so that they don't stick. While the zucchini is cooking to a see-through consistency, slice up 1 pound, bacon into 1 inch pieces. Add to skillet when most of the zucchini is cooked. Add to skillet, onion chopped to taste and liking. When all the ingredients have cooked down, add in ketchup to lightly coat the mixture and 1 teaspoon sugar (I generally do not add the sugar- I think it's sweet enough already, but many cooks do add sugar into the sauce). Salt and Pepper to taste. It's a great side-dish to any number of meats or egg dishes. And it can also be the main course as well. I like it with mac and cheese. Jeff likes to add a sprinkle of parm. cheese on top every once in a while too.

Well, that's probably more than you were asking for! But those two recipes are a big hit with "my man" (my boys liked the zucchini too) and I know you've got a few in your house too!

@randystreat @amandal Had one acorn squash today. I cooked it in the microwave with brown coconut sugar, cinnamon and a little butter. It was yummy!

The zucchini recipe sounds familiar. I think I have eaten that before! LOL! Might have to try that too. Thanks!
