Pumpkin guts

Roasting pumpkins in preparation for Thanksgiving. My in-laws don't like pies made from canned pumpkin. So, since my mother-in-law isn't able to do it, I have taken over the task. I haven't eaten canned pumpkin in so many years, I'm not sure I'd like it any more either. Not truly a fan of pumpkin pie any way.
And some mighty fine looking pumpkin guts, too. LOL I bet your pies are going to be delicious.

My children could only have carved pumpkin at Hallowe'en IF they ate the guts (soup, pie, roasted) as I hate food waste. They refused so no candles in pumkins!!! They're grown-ups now and STILL bang on abouthow cruel I was! Enjoy your celebratory meal!

@30pics4jackiesdiamond We don't carve pumpkins because we don't celebrate halloween. We don't eat the stringy guts, but I do roast the seeds. This pumpkin only had a few seeds, but the little one had a lot. My son has already eaten them all.

I only made pumpkin pie from scratch once. It was a lot of work and I'm a lazy cook so it's been canned pumpkin ever since! With some crazy editing you could make this look like a Jackson Pollock picture!

Good textures! Like you I'm not a fan of pumpkin pie but I think the dried fruit bits are OK. We don't really do Hallowe'en but my dear auntie who died this year aged 91years young, used to dress up and provide bags of sweets for the local children.
