We just had some acorn squash tonight- which I usually associate with the Fall, but it was from the supermarket. Next year, thanks to my getting to know several garlic farmers (!) we'll be in a co-op like yours. I can't wait! The collection here looks really good.

I like butternut roasted in the oven. Peel and cube the raw squash, drizzle with olive oil and toss with herbs (sage works well) and salt and pepper and roast in the oven til browned. With the acorn, I halve it and scoop out the seeds, put butter, brown sugar, and cinnamon in the center and bake til softened. Yum-o!

@randystreat The local farmers deliver it to my door. I pick out what I want online and they deliver it on Wednesdays. Most of it's locally grown.
@olivetreeann There are several co-ops in our area. I think each county has one. This one is bigger than that. They have all kinds of stuff, including meats and baked goods. We get the best salmon I have ever eaten and these really yummy cinnamon scones...oh, my! LOL! And they deliver it to my door. The one co-op delivers to our church parking lot once a week or every other week. You'll love it.
@hoosierhokie Oh, my, that butternut recipe sounds yummy. I must try that. I had one of the acorn squash today for lunch, fixed just like you said, except I did it in the microwave in 5 minutes because I was in a hurry. It was definitely yummy!
