Asian Palm Civet is a small cat-like arboreal native to South and South East Asia and are famous for assisting in the production of the world’s most expensive coffee - Kopi Luwak. Kopi Luwak is coffee that includes part-digested coffee cherries eaten and defecated by the Asian palm civet. Fermentation occurs as the cherries pass through a civet's intestines, and after being defecated with other fecal matter, they are collected.
