No need to be worried about getting lost in the mind-boggling medina of Fes (or Fez) - had a guide! I am certainly not a meat expert, but I thought the white pile sitting on the counter was intestines, or some other organ. Regardless, I decided to keep the pile of mystery meat out of focus. Hopefully your attention is on the shopkeeper, but I do realize it's hard to compete with mystery meat.
