Cardoon in churchyard

While on a walk, this was spotted in the graveyard of St Mary's church. It is just one of many huge flowers on a large spiky-leaved plant. I believe that Yoland has a picture of one also at: https://365project.org/yoland/365/2021-08-14 but hers is an artichoke.
It appears that the edible parts of an artichoke is the bud/flower head and the parts of a cardoon that are eaten are the stems and foliage!
