My kids have wanted to make their version of an "egg McMuffin" for a while now. We needed a circle to form the egg but didn't have one so I suggested the maple leaf in honour of Canada and Olympics. Here's our creation!! We made this as Olympic swimming was playing on the TV (we taped it since the actual event was happening around 2am our time). Our little town of 35000 has a swimmer at the games. He's 18 year old Alec Page and we watched him swim the 400IM right after eating this. He's 23rd in the world at the moment!!
@rockinrobyn We thought of a better idea afterwards... use the cookie cutter to cut through the cooked egg. It would leave cleaner edges. You'd just have to make sure you cook it in a small pan so you have some height!
Yea you! Yea your clever kids! Yea Canada! Yay Alec. We have a hometown hero swimming too... Missy Franklin... we are in love with her... BTW, am stealing this idea...going to look for cookie cutters right now!

When I was doing my 2 week AF reserve duty I made a bunch and froze them and took one each day for my "2nd breakfast" (being pregnant, the early ceral breakfast didn't last until lunch time and I need the extra protein)...instead of English muffins I made biscuits since my 2¾" circle cutter was the same size as the jumbo muffin tin I used to bake the eggs: http://www.100daysofrealfood.com/2010/07/08/recipe-whole-wheat-buttermilk-cheese-biscuits/
