@wiesnerbeth my husband is the gardener. And yes, all these things did come from our garden. But we're also members of a CSA - was clearing out some space in the fridge for the box of veggies I was about to pick up. When it gets too much, I just chop everything up and roast it , LOL! Ended up using those roasted veggies in a phyllo dough crust with brie cheese. It was pretty good.
@margonaut I love roasted vegetables but never thought if putting them in a phyllo crust. That sounds delicious! One of my sons made chocolate zucchini muffins last night but it only use up 1/4 of the zucchini. Roasting is next for sure!
@margonaut I loved your blog post! I'm definitely going to try that this week. I might even be able to get my non-vegetable-eater to try it if he knows he'll get phyllo. I laughed at the shot of the Graeter's carton! I was born in Ohio, grew up in Pennsylvania then moved back to Ohio for another 8 or 9 years . . . my family loves Graeter's!!! They used to sell it at Safeway in Virginia, but I haven't been able to find it lately. I will have to look again!
