I have got to make one of these! This is the third time a tomato pie has been mentioned recently. Where did you get your recipe?

@wiesnerbeth @eudora Beth, the recipe came from More Home Cooking by Laurie Colwin, which I got from the library after you recommended it! Basically, tomatoes sliced and drained, layered with chopped fresh basil, a little spring onion, and sharp cheddar cheese. Drizzled with mayo thinned with lemon juice before adding more cheese and a top crust. These are small tart-sized. I knew I'd never eat a large pie by myself. Surprisingly, the second one was still good a couple of days later... If I make them again, I'll put a little cheese on the bottom to prevent "soggy bottom"! Which wan't actually a problem, but still.

@margonaut See, I should pay more attention to my own cookbooks! My friend has twice given me a recipe for it, which sounds very similar, but I keep losing it. I will dig out my Laurie Colwin when I get back from my mom’s. The smaller tart size is a good idea since I’m the only one who will eat it at my house.
