The real collective noun for Oystercatchers is a "parcel", I think from their habit of crushing together as the rising tides swallow up the ground they gather on.
However as I watched this flock fly past, piping loudly, the idea came to mind that a "piping of Oystercatchers" would be a great name for a flock in flight.
