Pumpkin & Walnut Cannelloni

Yesterday, I was minding Mindy - a friend's dog - at Mum and Dad's house. So, I was out of bed and over at their house bright and early with plenty of things to do. This included all the ingredients to dinner of my famous vegetarian cannelloni I've been meaning to make my folks... and last night, I made a huge lot of it to have with them when they arrived home from Gabe and Kat's house.
But they ran late, so I kept the leftovers and put it in the fridge.

They have enough for around 2 more meals! Yummo!
Lynda, this looks delicious, and I'm sure they enjoyed every bite.
