We are very lucky to live near one of the best boulangerie in Paris, a tradionnal one with a real wood oven (only 6 in Paris). I visited it.... and yes I know it's a fantasy for many of you :-)

My son-in-law who is a chef got a chance to spend the night baking bread in Paris when he and my daughter were there last year. He had an introduction from a French chef he knew. Unfortunately I can't remember the name of the bakery. I asked my daughter (who is a pastry chef) why she didn't go too, and she said, "I'm on vacation! No baking for me!"
@bruni they pu wood, then let the flames go in the oven bake the bread, then put wood again etc... there's like a door to open to put the flames and heat the oven... I don't really know how to explain but it's kind of "manual" and the secret is "experience and knowledge"...
@johnnyfrs when you're lucky enough to buy a hot baguette, just coming out of the oven (wich happens many times during the day) there's nothing better.... and if you have some very good cheese (and wine?) you don't need nothing else ;-)
wonderful perspective Helene... how do you do this - do you just go ahead and ask to go 'behind the scenes' to take a picture? Bread is one of my many downfalls... just love fresh bread when it's still warm! Best with some butter and salt... mmmmh!
