We only have 2 food trucks in Paris, they're quite new but I love when Paris reminds me NYC (even if I never try them they're supposed to be very good and are very succesful)

I would love to find one of those. As a vegetarian, I found trying to find an on-the-go lunch in Paris really hard. By the time I left France after three months, I was soooo sick of chevre or mozzarella baguettes. We're lucky in Australia, with so many little sandwich shops all over our cities where we can have all sorts of toppings on breads. So many varieties.
Daughter and Grand-daughter in Paris last week. A group of Romany teenage girls stole grand-daughter's smart phone. Left a real bad taste in both of their mouths.
We just have the pizza vans down here in the sticks, though some of the English have set up fish and chip and curry vans, but they only go to events. Don't sell on the street.
