Sourdough day

Sourdough baking is a lot of fun, with a surprise whenever you open the oven. There a lot of characteristics to aim for. In this loaf I managed: 1.Crust (dimpled and caramel brown), 2. Crumb (nice and open with lots of holes) and 3. Flavour (slightly tangy). Sadly it didn't really rise and was rather chewy!
