Oh Christmas Cake by peterdegraaff

Oh Christmas Cake

My father was a pastry cook and baker. As a youth I would help in the bakery every afternoon, serve in the shop on Saturday mornings, and during holidays do a little more. Christmas and Easter were always the busiest of times.

Yesterday my daughter and I baked this cake. The fruit had soaked overnight in brandy and sherry. I showed her the technique for lining a tin that my father had taught me - lining tins had always been fun. Mixing the ingredients and decorating the cake with almonds brings its own joy.

The cake baked for three and half hours, and weighs 2.5 kilos or 5.5 pounds. It has now gone into a tin to rest for a few weeks.

looks good... will you be topping it up with a little rum/brandy between now and Christmas?

I am impressed! Anyone with baking skills impresses me, since I have none, lol. I can't even make the pre-mixed shortbread cookies decently!
