Lemon almond biscotti. They are sooo amazing :)

Ingredients, from top left:
- 1kg almond meal
- lemon essence
- 660g icing sugar + 100g-ish extra (for coating)
- 1 whole egg
- 6 egg whites
- (and a little piece of paper to help me remember everything xD)

Preheat oven to 200 degrees C. Mix ingredients (except extra icing sugar for coating) into a large bowl until combined well, adding lemon essence to taste. Prepare a clean tray with icing sugar.Grab a small handful of mixture, roll it into a ball, and roll it into a log on the tray with icing sugar, coating with icing sugar as you roll. Pinch each end of the log and bend into an 'S' shape (or any shape you like really!) and place onto baking trays lined with baking paper. Bake for 10-15 minutes or until just crispy on outside. Leave to cool, and enjoy :)

TIP: you can use the leftover egg yolks to make custard!
