my partner for the get pushed challenge this week is glenys @glenvic and her challenge was: "I would love to see a photo of "Chocolate" in any form."
i promised partner that for his birthday or for the holidays, i would make him the 'healthy chocolate cake' that i used to make for him in the late nineties. today while going through my papers, i found the recipe so i made my way to the market and got the ingredients needed. this cake is also 'energy efficient' as i "bake" this on the stove-top using my seven-ply stainless steel cooking pan.
in a bowl, mix together the following: 1 Betty Crocker golden cake mix, 1/2 cup cocoa (i use ghirardeli), 2 eggs, 1 cup water, 3/4 cup grated potato, 1 cup grated carrot, 3/4 cup grated zucchini. line pan with wax paper and pour batter. cook on medium heat for 5 minutes, then switch to low heat for 20-25 minutes or until done, insert a toothpick in centre of cake, when the toothpick comes out clean, the cake's done. glaze it anyway you want. i make a special chocolate glaze with 1/2 cup of light cream and 1 cup milk chocolate wafers, heat together until chocolate is melted. pour over the cake that has cooled.
partner had two big servings. the cake is fluffy and light. the only sinful thing in this chocolate is the glaze really.
Oh my gosh, this looks beautiful! I love the sound of making this with the much healthier ingredients. But on the "stove top?" Really" O.K. I'll try it. Does it have to be a seven-ply stainless steel cooking pan? Every photo is beautiful and interesting. I love to watch cooking shows and this is just like that. I had just had a cup of Ghiardeli cocoa with cream topping before I saw this!
@roth - delicious and light, moist and fluffy and it's okay to have a second serving. :-)
@karenann - doesn't have to be 7-ply but the bottom of the pan has to be quite thick or the cake will burn in no time. or else probably use a lower setting for longer duration. thank you, KA, and for the generous fav.

interesting that it cooks on the stovetop....very cool - - i like this shot, but two things maybe could be improved: 1) needs more light so we can REALLY see the chocolate better and 2) my big mouth needs to be in the shot, gulping that chocolate down!
This looks delicious - just what I was hoping for and to have the recipe is a bonus. I like the collage - a nice touch. I agree with Jenny Tucker that I would like a little more light on the cake but that is maybe the fault of my monitor,
Sounds like a great recipe- and looks like a delicious cake!! Printed this one out. I might have to try this for daughter-in-law #1 who is a bit of a food snob! Organic, no sugar, no dairy blah blah blah- takes all the fun out of eating sometimes!! But a cake with zucchini in it, now that might grab her attention! Great collage Vikki!

@pandorasecho - the pan is 10" diameter and yes, i use the lid. you can use the chocolate cake mix so you needn't use cocoa. thank you, dixie.
I love chocolate - oh how difficult it would be to resist this challenge. Looks too yummy.
