T is for Tomatoes, Basil and Olive Oil

Home grown tomatoes, but not by me. I halve them, slow roast them and store them in a jar in oil, absolfably delicious!!

@randystreat Don't last long as we eat them! Cook at about 150C for half hour or so, leave to cool in the oven until it's cold. I don't add salt or anything. Bung in a jam jar and cover in oil. If kept in fridge oil solidifies. Today I've actually boiled them with cider vinegar,sugar salt, bay and basil, sieved and made ketchup!!
