I Missed Pigs for a Vegan

Today is Pass the Pigs/Pigmania day and it has to be a really important event for me to miss out. I missed Pigs today because my brother and family visited and as my niece is a vegan I adapted a blueberry muffin recipe for her.

Sorry Kathy, Katy, Mary, Sue and Vikkster my family took precedence and these lemon drizzle blueberry muffins were a surprise success!

Any muffin recipe works with these adaptations.

For each egg - substitute a really over ripe, black, liquid banana ( I freeze overripe ones they defrost to the perfect liquid)

Replace milk with any milk substitute ( I used coconut)

I beat the banana mush, milk, oil all together before adding the gloop to the dry ingredients.

I've tried substituting the banana for egg in scones it was bleugh!!
