I've heard the day after Thanksgiving called "Digestion Day" so I thought I'd add my contribution to making that process a little easier. This was the dessert I made for our Thanksgiving dinner. It is called Hot Fudge Pudding Cake, and, although it looks and tastes decadent, it is only 240 calories. Plus it mixes up in the baking pan while the turkey is resting before it is carved. Then you pop the cake in the oven and it cooks while you are dining and finishes about the time you are ready to have dessert. During baking a cake layer forms on top and rich chocolate sauce appears on the bottom.
Here is the recipe:
1 cup Bisquik
1 cup granulated sugar
3 Tablespoons plus 1/3 cup unsweetened cocoa powder
1/2 cup milk
1 teaspoon vanilla
1 and 2/3 cups hot tap water
Mix Bisquik, 1/2 cup granulated sugar and 3 Tablespoons cocoa powder in greased 8" square baking pan (I used baking spray like Pam) Stir in milk and vanilla til well blended. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup granulated sugar. Pour on water and bake in preheated 350 degree oven for 40 minutes or til top is firm. Serve at once in dessert bowls with sauce spooned over cake. Here's a tip I figured out for myself. Don't pour the hot water on til you have placed the pan on the oven shelf, then push the shelf. That way the pan won't slosh around on the trip to the oven.
Left-overs should be refrigerated and can be dished out and reheated in the microwave. I hope you enjoy it as much as John and I did.
I will definitely copy this one to make for my chocolate loving grandkids for next year. I made a chocolate bourbon pecan pie and pumpkin pie in the AM. Thank God for double ovens!
