I was so pleased when Gary prepared the veg. to make this soup It is so easy to make , flavoursome and I love it with hot buttered toast !
I thought I would share the recipe with you ---
Courgette and Brie Soup .
450 g (1lb ) courgettes, sliced
2medium potatoes-approx. 350g (12oz) peeled and chopped
1 onion , finely chopped
1.2 litres (2 pints) vegetable stock ( I use veg stock cubes 3-4 in hot water )
225g (8 oz) Brie Cheese -- remove end rind and cut cheese into pieces
salt and freshly ground black pepper to taste .
Method. Put all ingredients except the Brie cheese into a large saucepan .
Cover and bring to the boil and simmer for approx. 15 mins until the veg. are tender .
Sir in the cheese until melted , cool a little and either blitz or puree in a liquidizer .
Taste for seasoning .
If the soup is too thick dilute a little with more stock or milk !

The toast looks very tempting too - such an even, golden brown. I never get mine to look like that.
@sailingmusic Myrna , you may know Courgette as Zucchini !! Wikipedia definition is --- "Courgette or Zucchini is a summer squash and can reach a metre long , but is usually harvested at half the size or less . A full grown courgette is referred to as a Marrow "

mmm, I printed out the recipe. Sounds fab. The best soup I've ever had was at the Atlanta airport, and it was Mushroom and Brie soup. I may adds some mushrooms to this soup as well. Thanks for sharing!
