A batch of baking

Yesterday while roasting the Sunday joint of meat , I did a little baking -- what I always use to do on a Sunday morning when I was teaching .and a habit that is still with me and making an economical use of the oven !
This is the N.Z. Sultana Cake which I got the recipe here on 365 from Pat Knowles @happypat -- a beautiful moist cake . I always make it in a loaf tin and the excess mixture I place in individual muffin cases , which are ideal for Gary's lunch box !!
