violet artichoke March 11

Rainbow2018. Yesterday Helen Jane @helenhall posted a picture of artichokes and gave me the idea of cooking a few for lunch. This vegetable is part of the classical Italian cuisine and can be cooked in a hundred ways. My mother liked to make wonderful "frittata di carciofi" or to fry them after having put them in a batter. I like to cook them in a pan with some parsley, oil and water, Sometimes the inside can be filled with ham and bread crumbs. The Jewish recipe is the so-called carciofo alla Giudia, deep fried entire as it is. It can be eaten in Rome in one of the many restaurants of the ghetto and it is fabulous. Small artichokes can be eaten raw, in a salad or preserved under oil.
On top of all that it has the advantage of being violet!

Great shot, cool pov and lovely for the violet day. I should use them far more in my cuisine, as M. and I love them. But somehow, we can not get them so often.

The artichoke seems to have naturally beautiful curves and patterns and colours. I just love this image of yours and the way it occupies the whole frame.
