Today we went plant-based with this pretty salad - kohlabi and beets from the CSA, added some parsley and green onion from my kitchen garden, and sprinkled over with some sliced almonds. Dressed it in olive oil, juice from a lime and an orange. Paired it with meatballs made from mushrooms. Light and refreshing in these hot hot days.
