I've been making this dinner for two years now, and it's a real winner for my husband, who jokingly says he hates having "gourmet leftovers AGAIN" when I make a huge batch (so we eat it the next day too). When I embarked about 2 years ago to lose weight, this was one of those dishes I could eat all on the plate and still lose weight. It's almost 2 years since that time, and I've kept 30 pounds off since then, so I make this one almost every two weeks. The meat is mixed with a spiced yogurt combination and cooked in the oven. While that cooks, I usually carmelize onions and peppers in a pan on the stove and I roast potatoes and carrots in the oven. I make a yogurt sauce with Zaatar, garlic, lime juice, salt, and sumac.
