Oh my so delish. My own recipe on the fly. With my neighbour's generous gift of oregano from her garden. And I bought a new car today. It's a miracle I came home and whipped this up in less than 20 minutes. This omnivore still loves a plant-based meal!
@888rachel so far she's keeping it up. I have been doing seafood too. I'm the only one who really liked the tofu, but she ate it! She makes personal veggie pizzas a lot. And she's still eating meat, but very selective. I put spinach, tomatoes, onions, garlic, and peppers in so many things now.
@When I was in China, we ate a fair bit of tofu. Our favourite was Mapo doufu (with chilli). Even my boys like this one. There are some recipes for it on the internet...sorry, my recipe isn't handy. You sound like a great cook.
