Kira and I had Kimchi stew at an amazing restaurant in Cambridge, MA so we decided to try to replicate it today. We also decided to make homemade Kimchi for later.
We started at HMart where we bought ingredients on our list--we looked so lost half the time. It's one of my favorite markets, and I bought some items one can't get at the regular grocery around me.
The stew is Kimchi, Kimchi brine, Pork, onions, green onions, salt, pepper, Korean red pepper flakes, SPICY Korean red pepper paste, Anchovy stock, and tofu slices. It's the ultimate Korean comfort stew, and it was just like that of the restaurant's! If you have an interest in making this dish, you can make many variations. Here is my source. I love this chef! Yours looks every bit as pretty as hers did in the link you provided. I had just recently Seen how to make kimchi on the TV show "how it is made." It sounds interesting but I've never tried it. In reading through the links that you posted I could imagine eating it and getting all sweaty from it! That might be one of the reasons why I haven't tried it. Hot flashes are doing the same thing for me and there are no calories in them😜 I love the collage that shows the process.
@grammyn I am not a huge Kimchi fan, but I do like the stew. The Kimchi we made separately does not include any seafood as she proposed. That felt gross for me. Traditionally, the veggies ferment over night, but I skipped that step too. For the stew, I did make the anchovy broth feeling sort of griss, but it really made the flavor great (I don't like fishy smells!). Thanks for the kind comments!! @jgpittenger Kimchi recipe is in link. I know you don't eat pork. The Kimchi doesn't call for it, but it does call for seafood (which I didn't use in my homemade kimchi--that's actually vegan). I'm an omnivore, so any time you witness pork, you can substitute anything you like usually. Hope that helps.
