@kwind I make soup every week with all of my leftover veggies I roast. I make lots of them to cover dinner, and then in the morning, I just add broth, bring to a boil, then puree. So easy. Any big batches get frozen in individual servings so I always have lunch ready. I do the same on the grill. I grill lots of things at one time with the intention of portioning out whatever was not for the evening. It's made life really better (and healthier!). :)
