Here's a bit of interesting history. In 1879 a young man called Thomas John Edmonds came to New Zealand from England. He started a grocery store in Christchurch and realised how dissatisfied the locals were with the baking powder that was currently available. He experimented, and made his own baking powder, which, after a slow start, became a resounding success. Edmonds baking powder (and other things, like flour) are still available today. There's even an Edmond's Cookbook - reprinted many times and lots of young New Zealanders have learnt to cook from the basic recipes it offers.
