After yesterday's Thanksgiving meal, we had a lot of ham left, so today I made a huge pot of Ham & Green Beans with some pasta noodles. The broth was nice and rich, and we ended up with four large containers, one for each of the kids, and a few other people, and that was after we kept a nice size bowl for ourselves. Years ago, this is what my Mom always did with left overs. Good old fashion meal stretchers. Nothing went to waste.
Looks like a nice dish for a cold day. when we cook it's like cooking for an army. the two pots of meat, fresh green beans with pears gave us 22 big yogurt containers full, which we freeze for later quick meals.
Leftovers are sometimes the best part of the meal. We came home from church today with a big pan of leftover turkey from their Thanksgiving gathering yesterday. We missed the gathering because the car is on limited usage right now- but we won't miss out on the goodies now! Your soup sounds and looks delicious!
